If I were you I'd start simple and cheap, with equipment that sounds good. Check ebay for 8 track reel to reels like the Tascam TSR8. Get a decent mixer and some mics. You'll need a few condenser mics and some SM57s just to get started, and lots of mic cables. If your mixer doesn't have decent preamps you'll need to get one at least for the vocals. You're going to need compression and probably a noise gate as well.

You can get a good sound with this stuff, it just takes practice and patience and experimentation. Plus it's fun to learn!
