I think a 4-track cassette recorder would do what you're after for the time being with a lot better fun-to-frustration ratio than what would be encountered by trying to jump in PC recording. Check out the Tascam 414MKII Portastudio. You will at least need to add headphones, a microphone and patch chords to play back through your stereo.
