If their on risers, I suggest raising the mics up so that they're half way between the lowest head _ highest head. Try keeping the mic diaphragms about 1' apart and pointing them half way between the middle and edge of the choirs. If they're not on risers, then get the mics as high as you can and point them at the back of the choir. If the choirs are fairly small (less than 30) you can probably get the mics within 10' of the choir (but you'll have to put the mics farther apart if you want to keep the levels more consistant but avoid having them more than 8' apart in oder to preserve the true stereo image). If they're not on risers, you can probably get the mics within 5' of the first row granted the mics are high enough.
Just some general guidelines. I'm not pro at choral recordings but these seem to be good grounds to work with granted you know when to break the rules.
