Noise Reduction in CEP

I remember reading a post way back on the old site about a technique
somebody was using to reduce background noise on wave files using Cool
Edit Pro. It was something to the effect that they would highlight a
portion of the WAV before or after the music started, and by using this
portion of the track they were able to remove virtually all of the hiss
from the music portion of a track. If anyone knows what the hell I'm
talking about and can explain how this is done please elaborate.
A friend of mine gave me a copy of Cool Edit 96 and I'm wondering if
I can make use of it to fine tune my Cakewalk files.
