Here's one way: Pan all of your playback tracks (both MIDI and audio) completely to the Right channel. Then pan your new track being recorded hard to the Left channel. This, if effect, gives you a two buss mono system. You may find it helpful to solder up a connector to convert your headphone line from stereo to mono. Later, when you are mixing you can re-pan each track as you want for stereo effect.
