Hi there. I just recently got a pair of the SM-81s. First off, they kick the AKG1000's butt which I have also used as a pair. They are much more accurate and less cheesy. The 1000's are cheap but they aren't all that well respected... for good reason. The 81s are rock solid and aren't gonna go outta style anytime soon as they are a great versatile mic.
I've used the 81s as a stereo pair to record a rock-ish band live performance. They work fine for that although they are probably best as a pair for acoustic/jazz quieter types of music. They capture a flat true stereo image. They work super as overheads! They sound good on acoustic guitars. I wouldn't really use them on vocals although some people might. I wouldn't use them as the main mic for electric guitars either unless I was recording a thin airy Tele type sound. They also have a bass roll off which is handy for overheads and acoustic guitars that are too boomy.
