I don't know how much you know about computer recording so I'll start from the basics of you question. The connections have nothing to do with sound quality. The cards with RCA jacks tend to be higher quality but the connections aren't what makes them good. Take for instance, the Sound Blaster AWE64-G. It has RCA outs but still has the same cruddy convertors as the regular SB cards. Also, with digital, there is no headroom. 0dB is the max any digital machine can handle. Now, some cards don't handle signals around 0dB very well. The manufacturers don't give the electronics any extra headroom so the signal can actually start clipping below 0dB. This is common with lower end sound cards. What I'd suggest, is get a PCI soundcard that supports full duplex operation. I'd look in the $80+ range.
