You always keep a stereo pair panned hard L & R. You adjust the width while you're recording by how far you space the mics, and by what stereo technique you use... not with panning later. At least that's the "proper" method.

Example: use XY if you want a narrow stereo field. Use a spaced technique if you want a very wide stereo field. There are many books on stereo mic techniques if you wanna learn more.
