I believe they are percentages of sales which are taken in lieu of (but sometimes in addition to) payment "up front." So producers, for example, can take points on a record, gambling that it wil be successful, and thus make much more money than they would by settling for a flat fee (actors do this a lot as well). If I'm not mistaken, Steve Albini is one of the few who never takes points, believing that money should go to the artist's coffers (I could be wrong).
