I'd do like Bob says and bring just one ADAT. What i'd do is put the prerecorded music on the ADAT tracks 1-2, 3-6 would be close mics on each section of the choir, and 7-8 would be stereo room mics. It wouldn't hurt to bring compressors either, you'd be surprised how loud a choir can get, and I can say from experience that even if you're careful with setting your levels they can easily clip you on stronger passages. So with the mics i'd compress each channel gently and leave yourself some headroom. You also won't regret putting some tube pre's in front of the ADAT- and i'd use your best condensers for the stereo pair, and whatever else you have for the individual sections. You're going to need to bring some fairly long cables and boom stands, of course, and i'd bring at least an 8-channel mixer- I brought my 24-channel to do a similar job and didn't regret it.
