for stuff like that, less is generally better. I'd run a direct line from the music to 1 ADAT and record the whole choir together with a pair of good condensers. If you really feel the need, you can mic each section of the choir and run them directly into their own tracks but if they're good, the room is good and the conductor is good, you should only need 2 tracks for the whole choir. Big D is good at these sorts of things so he can fill you in on details better than I.
